Any tips for keeping lentil patties from burning if I use high heat, or crumbling if I use medium heat?

Answer:
Yeah, so it might be your binder to tell you the truth. So, um, I would find a good binder for those. I don't know what you use, but lentils typically, um, you know, uh, what I'll do is just kind of puree some of the lentil a bit. Not all of them, but just some of them to be able to help bind those up together. Aquafaba is another great binder as well too. Um, but yeah, like if you do high heat right away, you're definitely going to burn it. So the medium is probably where I would kind of go in between there. So you're still getting, uh, heated through, you're getting a nice edge on it as well. Um, and then using that binder to be able to kind of keep everything, um, you know, like for the lentils I would just do a little puree on, you know, maybe a like a quarter of the lentils and then kind of use that as my binder, um, to be able to come back together as well too. Um, you'll find that it keeps the moisture in there a lot more too.
