Question:

Packaged cooking instructions for Kamut says to boil in liquid and toss liquid after cooking. The water is colored. Do I risk tossing nutrients?

Answer:

So I don't know, but when I do cook with it, I always rinse it off really, really well. And then I cook it and the water isn't quite as discolored as you are discussing. I don't throw them out, but I think rinsing them well under warm water in a strainer of some sort is the best way to go, just like you would do for lentils and other things like that.
