Question:

When using silken tofu, do you carefully drain the liquid or use it?

Answer:
I typically always am going to drain the liquid on any tofu, including silk and, um, if I'm gonna use it, so, um, i, I guess you could use it for something else as a high protein, you know, kind of thing, but I've just always discarded the, uh, the water that, um, the tofu is being soaked in that's basically just keeping it so it's not going to dry out and you get the right texture you're looking for as well too. Um, you could probably do some experimentation with it to see if it would act like an aquafaba to be able to give you a protein rich, you know, uh, water in it. But I've never done it myself and I've never seen anybody else do that. So definitely do that with air caution as well too, Melissa.
