Question:

If salad lettuce has brown spots, is that a sign that food is not being refrigerated correctly at the restaurant or store?
— Sylvia Edwards
Answer:
The quick, quick answer is yes, and some things will develop brown spots because they've been sitting around for a long time, and other things will develop brown spots because they've been stored at the incorrect temperature, whether that's a high temperature or even a low temperature, okay, that can cause premature breakdown of products. So, um, the, the quick answer is yes, it's incorrect storage, but it can be due to a couple of different things. Time, right, or temperature. Thank you.
