Question:

So many recipes call for coconut oil and coconut milk. What can I substitute instead?

Answer:

I prefer to use extra virgin olive oil and sunflower oil in my desserts. And coconut milk has a place, but again, I use it rarely. I use it to make a vanilla pastry cream for example. I prefer to make my truffle ganache, for example, and my cakes with a rich plant milk instead of coconut milk.
