Is Guar gum a good substitute for Agar powder?

Answer:

It is not at all a good sub. Gu gum is one of the vegetable gums that thickens and agar is a seaweed. And that gels, I often use agar in, um, combination with starches like corn starch or arrow root, for example, but not with gure. So I would say yuck. I would say yuck. Um, I'm sorry about that, Syl. I mean, here's the thing about subbing. If you're going to sub something and I take, you know, I, I like to try to adapt recipes, but I never do a full recipe if I'm trying something new. If I'm trying a new cake recipe, I bake a ha most cakes recipes call for an eight or nine inch cake. I bought myself some six inch cake pans and that's what I use.
