How do you know when you need to temper chocolate?

Answer:

It's a whole process of changing the temperature up and down, up and down. I find, look, I've been keeping my eye on this the whole time. So these were kept in the freezer and then the refrigerator and then at room temperature and they're still nice and shiny. Shiny. So that's, you know, that's something if you're making candy, you probably need to temper chocolate.
