Question:

How long does coconut yogurt last in the fridge? And can it be frozen or used in baked foods?
— Sue Baker
Answer:
So, coconut yogurt in the fridge? Yeah, you, it lasts fine in the fridge as long as it's well covered. You wanna make sure that there's no, no air getting to it. So, uh, if you make it yourself, uh, I usually put like a, um, like a cellophane or, um, you know, paper or the, uh, cling wrap or whatever it is, basically down inside of a Tupperware and kind of tuck it down and then put the lid on it to make sure that no air is getting to it. Um, and that, you know, should last, you know, a while. You usually say six to seven days, something like that. It absolutely can be frozen. Um, but coconut yogurt is, when it gets freezes, it's really hard, so don't expect to be able to scoop it out like an ice cream or something like that. Um, my daughter loves freezing, um, her, her yogurt like that, uh, but it takes her about 20 minutes to eat her yogurt after she's done it because you have to kind of scrape off little pieces of it to be able to eat. Um, can it be used in baked goods? Absolutely, um, depending on what, uh, is in it, you know, if you're using something like a blueberry yogurt, you might wanna watch out, you know, kind of cooking dimes and stuff like that. But a plain yogurt can absolutely be used in baked foods as well too.
