What’s one thing most pastry students overlook that could really help them grow?

Answer:
I would say humility. Be humble about, uh, what is it you're doing, whether you're, uh, a student or a professional, frankly. And be diligent about your work. Uh, acquire as much knowledge and skill as you can and, uh, move forth. Um, you know, with just a, a great open attitude toward criticism, uh, feedback, you know, um, the difficult, uh, or easy, uh, in other words, the, the good and the bad, uh, and just keep on learning.
