Is it ok to use clean potato peels to make soup stock?

So yes, you can use potato peels to make soup stock. I would suggest if you, if you have a saving bag in your freezer, that you would also have some of the aromatics like carrots, celery, and onions, and save the garlic ends. And those potato peels will certainly add not only a beautiful flavor, but a lovely, lovely color as well.
