Question:

What herbs would suit herb and tofu stuffed arepas other than cilantro?

— Aixa Torregrosa-Vazquez

Answer:

I might do something like a green garlic, like the tops of greens. They kind of look like chives, which also would be a great thing to be able to put into them as well. But that green garlic on the top of it would be a fantastic thing. Chives as well would be a nice one to be able to add to it. Depending on the flavor profiles you're being able to look, and if you're only looking for herbs, that's probably a good start for you. But other spices you might want to be able to think about to be able to add into them to add more of a dynamic flavor. You might want to look at something like paprika. Also on the herb front, you could do thyme or something like that if you wanted to switch things up a bit. If you're going away from a traditional style, you could do a thyme and rosemary, which would be quite good. But a little surprising for somebody who's biting into an arepa and wouldn't be expecting that as well, too. But yeah, so doing a garlic and onion, cilantro would be a fantastic-- Oh, oregano is actually a very traditional one, too, that you might want to try on those, too. But as far as spices, the paprika, maybe a little sumac would be nice into it. Or you could completely switch it up and surprise people and do something like a curry or something like that, too. But always possibilities to be able to go outside the box and surprise people with those.
