Question:
What is the difference between a gas oven and an electric? I grew up with a gas oven and it took me a while to get used to an electric oven.

Answer:
I said earlier that I was always taught that electric maintain heat more evenly, and I would go so far as I would say to people, if you have the possibility in your home to have a dual range, I would pick a gas top and an electric oven. I wouldn't pick a gas top anymore. In New York, you can't do that. Turns out that gas, we love seeing the flame, that's not so good for you. So it took you a while to get used to your electric oven, I assume because it was baking differently from what you're used to, but I don't think it's the difference between the gas and the electric. It's a new oven that you had to get used to, and you have to get to know your oven. So get an oven thermometer in there, test the temperature at 350, at 300, at 400. Keep a note, pay attention, and that's what we all have to do.
