Question:
We recently learned how to cook Portuguese "pasteis de nata" the instructions say 500 in a commercial oven & lower in a home oven 430. Can you explain why there would be a difference?

Answer:
Commercial ovens are a whole different thing. I've used them because I worked in restaurants. I think many home ovens baking at 500 can be a bit of a problem, can go higher, so that's the only thing that I could think of. Have you made them? Have you tried it? I might say go to 450 and see what happens with that. Sounds delicious, though.
