Question
Mel Dorling
I wondered whether you could recommend something to add to vegan burgers to make them a bit more firm. Would it be psyllium husk powder or something similar?
Answer
So I like a nice, sturdy, firm veggie burger. I don't want it to be mushy like I'm eating a vegetable patty. So I have a tendency to over add flax meal egg. And you may remember from other discussions that we've had that a flax meal egg is a tablespoon of flax meal seed, flax meal, and three tablespoons of water, and let it set for about 10 minutes, and then it gets into this gelatinous state, which will work perfectly as an egg. So rather than adding two, I would add three. And the burger recipe is below. It's from "VegWorld" magazine. It's a recipe I wrote for the excuse me, "Edg2" cookbook, and it might be my favorite burger recipe. It's called the Yo Adrian Burger because I lived in Philadelphia, and anyone who knows me knows that I love Rocky Balboa. And when I was in the Peace Corps, I saw "Rocky" five times in one week. And Rocky Balboa is the reason why I moved to Philadelphia. So Rip named it the Yo Adrian Burger. It's really easy to make. It's got shredded sweet potatoes in it, so it lends some moisture to it, aside from nutrient density, and it's nut-free. It does have sunflower seeds in it, but it's spiced really well. It's got vinegar in it. It has everything that you would love for a good burger. So I hope that you get to make the burger, and let me know how it works out for you.
