Question

What would you consider “must have" salts to have on hand? There are so many options when shopping.
Answer
I actually put a link in here to Diamond Crystal salts. This is actually kind of my go-to salt. This is the one I always recommend to everybody when they're coming by to the house, and they're wondering what kind of salt I use. That's the one that I keep on my counter all the time. I use it like a table salt. It's really nice because when you put it in, it just basically dissolves right into it as well, which is great, so it's good for a cooking salt. Now, other salts you might want to have on hand are a finishing salt or a thicker crystal salt, which are great, but those are something you'd typically put on the top of a dish after you've actually cooked it and seasoned it. So it's just something to finish the salts with as well. There are some other ones that are just kind of a little kitschy, like some black salts, not meaning the black salt that tastes like sulfur that a lot of times we'll put in tofu to make it taste like eggs, but the actual black salt, which is just a nice plating one as well, too. You can find different versions of that, or volcanic salt and stuff like that, too. But by and large, my biggest recommendation would be the Diamond Crystal salts. And I basically just fill up my salt caddy with that all the time, and I use it for everything from doing the pasta water for pastas to seasoning dishes at the same time. I even use it for canning stuff, too. Hope that helps, Kelly.
