I noticed you are in Wisconsin. What would be your favorite moldy cheese (blue, gorgonzola, stilton, etc...?)
Answer
I've been vegan on and off for a long time, but I'm vegetarian, and I have been again since I've moved to Wisconsin. But moldy cheese is definitely one of those I don't really go near at all. I'm definitely more on a sheep milk production, something like a... Yeah. Cheese is kind of something that I like to have every so often, but yeah, a manchego might be something like that. One of my daughters is really into cheese. The other one wants nothing to do with any dairy products at all. But yeah. So not a big moldy cheese person. And I'm actually not a really huge cheese person or I don't eat a lot of cheese. I think the one that I might go to is Swiss might be more often than not. But being in Madison, Wisconsin, we're close enough to Hook's Cheese, which is a really small independent cheese maker in Wisconsin, in Mineral Point, and so we get cheese from them quite often. Usually cheese curds, just because they're so fresh and we're in Mineral Point pretty often as well, too. But yeah. So as far as cheese goes, it's something I play around with every so often, but it's usually on a cheese tray, not so much cooking with cheese. Kind of depending on what the recipe is, though. A lot of Jacques Pépin stuff that I like to do will have some good cheese in it, too.
