I understand the concept of pan tossing, however, I have an induction stove and was wondering whether the procedure is the same on an induction stovetop since when I lift the pan off of the stove, the heat is suspended. ?

Answer:

So it's a great question. I purposely do not toss when I use my induction stove top because I am afraid that I'm going to crack it and I did send Patrick an article this morning that discusses some of the elements of tossing. I just use a good Scraper when I am on a pan and generally speaking. My scraper is either going to be silicone or my scraper is going to be wooden and later. We'll talk a little bit more about Wood versus silicone, but there's that article for you, and I hope that that helps.
