Do you have a go-to bedtime snack for when the cravings hit at night?

Um, you know, I don't I try to not eat after 8 o'clock just so that I can sleep better and I will have a cup of like sleepy time tea and in the engine two book. One of my favorite recipes is called Mighty muffins It's an oat based muffin, maybe, you know with bananas and apples and everything else like that and I make them in many muffin tins and then put them in the freezer if I'm really hungry or think I'm hungry. I might have one or two of those and they certainly help to squelch any hunger that I might have. Yeah. I don't want to eat too much. Oh, this is funny one time. There was some leftover kale salad from dinner and it was around nine o'clock and I was like, oh this will be like horrible tomorrow. I'm gonna eat it now and I'm not kidding. I stayed up till like two o'clock in the morning because all of the those nutrient-dense cells of that kale kept me awake, so I learned long ago. Don't eat the kale.

Char Nolan is a serious crusader for plant-based education, armed with a degree in public health from Philadelphia’s Temple University. She teaches nutrition and plant-based cooking throughout Philadelphia, and in many underserved communities. Char holds a certificate in plant-based nutrition from eCornell and completed Rouxbe’s Plant-Based Professional Certification course in 2015. In 2019, Char completed post-graduate course work in social media marketing at the University of the Arts. When she is not cooking or teaching, she manages social media accounts for several plant-based influencers. Char prides herself on learning everything she knows about cooking from growing up in her grandparents’ Italian restaurant. Her favorite vegetables are Brussels sprouts and kale, of course. Char originally hails from Queens, NY, but has lived in Philadelphia most of her adult life. She is a former Peace Corps Volunteer.
