Gluten-free Pound Cake

This is a family favorite now and you will never know it is Gluten-Free. You do have to make sure all ingredients are at room temperature before starting however. In addition, because of the nature of gluten-free cooking the baking time can vary greatly according to your own oven (usually needing more time that less) so be aware of that upfront! :D

Ingredients for the cake

Ingredients

  • 2 cups sugar
  • 1 cup unsalted butter, melted
  • 5 large eggs
  • 4 1/4 teaspoons vanilla extract
  • 1/2 cup potato flour
  • 2 1/2 cup white rice flour
  • 2 teaspoons baking powder
  • 2 teaspoons xanthan gum
  • 1 cup milk
Preheat your oven to 350 degrees. Ready a 10-in bread ban (grease and flour). Blend the sugar and butter in a large bowl until creamy. Add one egg at a time and beat mixture after each one. Mix in the vanilla. In a separate bowl, mix flour, baking powder, and xanthan gum before slowly adding it to the sugar and butter mix. Lastly, add the milk slowly while mixing. Beat until creamy and smooth.

Glaze Ingredients

  • 2 cups powdered sugar
  • 3 tablespoons water
  • 1/2 tsp vanilla extract
Wait until cake is cooking. Mix powdered sugar, water, and vanilla until a thick icing-like substance.

Baking and finish

Pour into pan and bake for 60 minutes or until toothpick comes out clean. (as said before depending on your oven it may take up to an extra 20 minutes) Allow to cool for a bit (no more than 15 minutes) before setting on a cooling rank. Once on the rack and slightly cooled drizzle the icing over the top. Enjoy!
