Prepare Cheese
Ingredients
3 lbs ricotta cheese
Squeeze and strain ricotta cheese through double thickness of cheesecloth until very dry, about one hour.

Prepare Pan
Ingredients
6 Graham Crackers
Meanwhile butter and coat (bottom and sides) 9” or 10” spring form cake pan with crushed graham cracker crumbs (put cookies in a plastic bag and crush with something heavy).

Cheese Mixture
Ingredients
1 1/2 cup sugar
grated peel of one lemon
1/2 cup flour
8 egg yolks at room temperature
In a large bowl mix cheese, sugar, lemon peel and flour. Slowly add egg yolks, one at a time until incorporated.

Egg whites
Ingredients
8 egg whites at room temperature
1/2 cup sugar
1 tsp pure vanilla extract
In a clean bowl beat egg whites with the sugar till stiff, add vanilla. Gently fold into cheese mixture with spatula or wooden spoon. Turn into the prepared pan.

Bake
Bake in preheated oven at 425°F for 10 minutes, then at 350°F for 1 hour. Turn heat off and leave cake in the oven to cool for another hour.
