Seaweed Butter

Ingredients

  • 4 tablespoons butter, softened
  • 1 tablespoon flaked dried kelp or dulse
  • 1 teaspoon Pernod or other anise-flavored liquor
  • Salt to taste
  • Freshly ground pepper to taste
Gather all the ingredients.

Preparing the Seaweed Butter

Combine the butter, kelp, and Pernod in a bowl and season with salt and pepper. Whisk vigorously until thoroughly combined. Shape the butter into a log, wrap tightly in plastic wrap, and freeze until ready to use.

    The smallest amount of Pernod I can find is 750ml, which I don't need. Any suggestions for alternates that come in smaller amounts that don't cost $30. I really like this idea and am eager to try it as part of my culinary education!

    Hi Michelle, on the one hand, I see that half bottles and 50 ml bottles of Pernod have been made, although I'm not familiar with their current availability. On the other hand, you might consider another licorice-flavored liquor as a substitute. Consider reaching out to a local liquor store to ask about availability that is best suitable to you. Cheers!
