Use this method for steak fish, orange-fleshed fish, and full-flavored fillet fish.

Ingredients
Swordfish steaks
salt to taste
butter, softened (2 tbsp for every 12 oz of fish)
1 shallot, minced
1 garlic clove, sliced
juice of 1/2 lemon
Pernod, enough to sprinkle over the fish
oil, enough to oil the pan
Gather all the ingredients.

Preparing the Swordfish
Salt the swordfish to taste.
Mash together softened butter, shallot, garlic, and the lemon juice. Spread it over the top of the fish. Sprinkle the fish with Pernod.
Place the seasoned fish on a lightly oiled ovenproof pan. Place on the highest rack of the broiler set to high. Cook for 10 minutes for each inch of thickness.
Remove from the oven and serve.
