Question:
I have tried and failed to create a rich, dense gingerbread loaf. I have achieved a delicious ginger cake crumb but that's not what I'm after, any thoughts?

Answer:
If you've got a ginger cake with a delicate crumb is what I'm thinking. You might want to cut back on some of the fat and some of the liquid and add another form of egg replacement to see if you can get that.
