Question:
If a recipe calls for white wine, what can I substitute that is non-alcoholic?

Answer:
Sometimes I've used a good quality vinegar. Sometimes I just use water. I'll use stock. I don't really like to use fruit juice that much I find that it caramelizes too much but I think water or a low sodium stock or two really good ways to go you can if you like the non-alcoholic cooking wines use that and esselstin has one of my favorite recipes for it's called mommy's mushroom gravy 2.0 and she uses cooking Sherry in it. So cooking non-alcoholic cherry wine. So that's another thing to think about. Hope that helps.
