Thinly cut veal scallopini rolled and stuffed with spring onions, mushrooms, garlic and fresh herbs. A mild mustard and cream sauce finishes the dish nicely. This makes a wonderful main meal when combined with fresh vegetables or a nice salad.
Chef's notes
Like all of my recipes this is GLUTEN FREE.
You can add some finely chopped chilli to the rollups during preparation if you want to add a little "bite" to the dish.
Green prawns can be chopped finely and rolled up along with the other ingredients as a classy addition.
Steps

Prepare the Mise en Place
Ingredients
3 x spring onions.
1 clove of garlic
1 x 200 gram veal scallopini.
2 x medium sized brown or white mushrooms.
Small sprig of fresh Thyme.
Small sprig of fresh Parsley.
3 x fresh Sage leaves.
3 x rashers of bacon.
Medium handful of shredded tasty chese.
Clean and cut the spring onions lengthways to make long strips of fresh onion.
Crush the clove of garlic with a garlic crusher or emince finely.
If the veal is more than 5mm thick beat gently with a meat hammer until half that thickness. It chould be cut into a square sheet approx 4" x 8" (120mm x 200mm)
Finely chop the mushrooms.
Finely chop the Thyme, Parsley and Sage leaves.
Combine the herbs and set aside.
Cut the bacon rashers into long thin strips removing any rind that may be present.
Chop the cheese finely and set aside.

Roll the Veal.
Ingredients
All ingredients from above step.
Place the veal sheet on a clean chopping board.
Mix the herbs, mushrooms, cheese,garlic and cheese together in a large mixing bowl.
Place the spring onions lengthwise accross the veal slice.
Add the bacon strips in the same manner.
Sprinkle the herb, cheese, etc mixture over the other ingredients.

Cook the Veal.
Ingredients
Rolled veal from above.
20 mls olive oil.
Place the veal onto a baking tray.
Brush the olive oil over the meat with a pastry brush.
Put into an oven set at 150 degrees for about 20 minutes or until thoroughly cooked through.

Make The Sauce.
Ingredients
2 tblspns of Dijon mustard.
6 tblspns of thickened cream.
Small pinch of white pepper.
1 x clove of garlic finely chopped.
Thoroughly mix the mustard and cream together.
Place in a small saucepan and bring to a simmer.
Add the white pepper.
Add the garlic.
Simmer for about 3-5 minutes to thicken.

Serve the Dish.
Cut the finished veal into slices. Cook some vegetables such as green beans, broccoli, pumpkin and potato.
Arrange the vegetables and place the cooked veal slices to suit.
Pour some of the mustard sauce over the veal and vegetables and serve while still warm.
