Making the Simple Syrup
Ingredients
63 g Water, cold
85 g Granulated sugar
Combine the cold water and sugar in a saucepan.
Carefully stir on medium heat until the sugar dissolves, then bring to a boil.
Wash the side of the saucepan with a dampened pastry brush to release any sugar crystals.
Skim the impurities and transfer the syrup to a container. Let it cool to room temperature.
Cover and place it into the refrigerator until ready to use.
It is important to cover the syrup once it has cooled, or the surface will begin to crystallize.

Storage
Storing & Shelf Life:
Refrigerate a sugar syrup in an airtight container for up to 1 month. We do not recommend freezing sugar syrups.
