Ingredients

  • 125 g whole eggs
  • 25 g egg yolks
  • 1 g Fine sea salt or fine table salt
To begin scale all of the ingredients for egg wash precisely. Blend all ingredients together until smooth using an immersion blender. Strain the mixture into a clean bowl. If you are not using the egg wash immediately, cover and reserve it in the refrigerator for up to 2 days. This egg wash is a standard industry recipe and is used for almost all applications.
