Baked Cake Doughnuts

For our Baked Cake Doughnuts, we use the creaming method to make the batter. Unlike other doughnuts and zeppoles, these doughnuts are baked in a specific pan with a doughnut "hole." The Baked Cake Doughnuts are glazed with whole milk and confectioners' sugar and served warm.

  • Unsalted butter, 82% fat, for brushing, soft - As Needed
Scale the ingredients precisely and bring them to room temperature. Gather the necessary tools. Lightly brush butter into the doughnut pans. Preheat the oven to 400°F (200°C).

Making the Batter

  • 250 g Pastry flour or all-purpose flour
  • 7 g Baking powder
  • 50 g Unsalted butter, 82% fat, room temperature
  • 10 g Vanilla paste or extract
  • 40 g Grapeseed or vegetable oil
  • 80 g Granulated sugar
  • 50 g Light brown sugar, sugar in the raw, or dark brown sugar
  • 70 g Whole eggs
  • 180 g Whole milk
Sift the flour and baking powder. Reserve. Whisk the butter and vanilla for about 10 seconds. Gradually add the oil then the sugars. Add the eggs in two or three additions. Gradually add one-third of the milk and the dry ingredients at a time. Very gently whisk to combine after each addition and do not overmix. Pipe the batter into the doughnut pan. Fill approximately two-thirds. Do not overfill. Place on a baking tray.

Bake for about 15 minutes or until a toothpick comes out clean. If not, bake for 2 to 3 more minutes. Place on a wire rack to slightly cool, then unmold.

  • 110 g Confectioners’ sugar, sifted
  • 5 g Vanilla paste or extract
  • 30 g Whole milk
Whisk the confectioners’ sugar, vanilla, and milk until glossy and smooth. Dip the doughnuts into the glaze and clean any drippings from the side.

Storing & Shelf Life: Keep the doughnuts in a cool place for 1 day. Refrigerating Doughnuts Refrigerate unglazed doughnuts for 1 day. Freezing Doughnuts Freeze the baked, unglazed doughnuts wrapped in plastic or an airtight container for up to 1 month. To defrost, place it wrapped in the refrigerator overnight and serve the next day.
