Ingredients

  • 6 lbs boneless chicken, cut in 1 1/2-inch pieces
  • 1 1/2 cups all-purpose flour
  • 3 ounces cornstarch
Pre-heat deep fryer to 350º F. Mix floor and cornstarch together; toss in chicken to coat. Drop the chicken pieces in deep fryer, cook 4 to 5 minutes or until thoroughly cooked. CCP: Internal temperature must reach 165º F or higher for 15 seconds.

Sticky Sauce

Sticky Sauce

Ingredients

  • 1 1/2 cups honey
  • 3/4 cups granulated sugar
  • 1/2 cup apple cider vinegar
  • 3/4 cup soy sauce
  • 2 teaspoons fresh chopped garlic
  • 2 teaspoons fresh chopped ginger
  • 2 teaspoons hot sauce
  • 3 Tbsp. water
  • 1 1/2 Tbsp. cornstarch
Place honey, sugar, apple cider vinegar, soy sauce, garlic, ginger and hot sauce in a sauce pot; bring to a boil. Combine cold water and remaining cornstarch to make a slurry; stir into sauce mixture to thicken. Toss cooked chicken in sticky sauce. Serve Hot. CCP: Hold for service at 135 F or higher.
