Chef's notes

* 12-14 oz tofu blocks ** Press the tofu blocks for about 30 minutes to drain excess water before crumbling. This step is important to avoid a watery texture and flavor. *** Black salt is a sulfur-rich salt that, despite its name, is pinkish grey in color. Black salt is popular in Indian cooking, and once added to food has a very distinct sulphuric aroma. (Don't add too much!) For eggless cuisine, this salt is quite popular for scrambles and frittatas.

    I will second Joyce's comment and add that it even tops the chickpea scrambles I've tried. This is overall now my favorite tofu recipe. It is great through this recipe to discover black salt.
