Pastry Flour

Generally *pastry flour* sold in grocery stores is labelled cake and pastry flour. However, they are technically not the same. Cake flour has a slightly lower protein content, around 7-8%. Pastry flour has only 7-9% protein content and is generally interchangeable for most purposes.
